Tip of the Day: Dinners for Soccer Nights…

And so… school, soccer, and structured schedules reconvene into the organized chaos of a mom’s life. Homework, drop-offs, pick-ups, baths, bedtimes, and meals find a place in the few hours after the school bell rings.

Here are some ideas for meals that can be made-ahead or prepped ahead on those busy evenings where we want to avoid take-out or going-out:

-Salad Bar- Cobb salad inspired, Taco salad inspired, “whatever is in the fridge” inspired. Cut up, cook up, chop up, and bowl whatever inspires you. Put in the fridge for when you all get home. Put out all the little bowls and lettuce and let the family go to town creating their own salad.

-Pasta- cook pasta and sauce. Put in a covered baking dish or cover a Pyrex with aluminum foil. When you get home reheat for 20 minutes or if you have a fancy oven with delayed bake it could be hot and ready when you walk in the door.

-The crockpot- dust it off and use it. Pinterest has some good recipes.

-BBQ- prepare all that can be grilled. Leave on a plate for your husband to grill when he gets home. Works well if he gets home before you and the kids.

-Leftovers- plan to reheat and eat leftovers on your late evenings.

-Reduce, Reuse, Recycle- works for food too! If you have tri-tip and roasted vegetables one night, you can reuse all in a salad sprinkled with goat cheese and vinaigrette. Or have BBQ tri-tip sandwiches and quinoa salad with roasted vegetables. Or throw it all into pasta with some marinara or sprinkled with parmesan. Or get a pizza crust (or make) and throw it all on top with cheese- 15 minutes you have pizza.
